Until we got married, my husband did not know that sweet potatoes were a breakfast food.
We’ve been married a year and he still thinks I’m crazy for eating them with breakfast. I’ll eat them with any meal of the day, but that’s beside the point.
These twice baked sweet potato breakfast boats (that’s a mouthful) are so easy to make, and are the perfect combination of protein and complex carbohydrates to keep you feeling full and ready to tackle the day. Bake your sweet potatoes ahead of time and it makes the prep even easier. I use this method to cook my sweet potatoes and it works perfectly every single time!
If you’ve made twice baked potatoes before, the method is fairly similar. Scoop out the insides, leaving about a half inch of sweet potato around the edge. In a separate bowl, mash the potato, salt, pepper and milk. You can mix in chopped bacon here, too! Totally optional, but it’s delicious.
Divide the mixture back up between the two sweet potato skins, and make a well to crack your egg into. You’ll want to make a bigger well than you think. It’s okay if the sweet potato mixture comes up above the edges. It’s better to have too much room than not enough, which causes your egg whites to spill over the edges and onto the pan.
Pop them in the oven for 25-30 minutes at 350 degrees, depending on how well you like your eggs cooked. Mine are usually good near the 30 minute mark.
You can actually bake these entire things on a Sunday and just re-heat the halves for breakfast during the week!
Top them with your preferred toppings! I tend to go for a Mexican twist, but avocado, salt and pepper would be just as tasty.
- Preheat oven to 350 degrees, and spray a foil lined cooking sheet with non-stick spray.
- Cut the pre-cooked sweet potato in half. Scoop out the inside of the sweet potato into a bowl, leaving about a half inch around the edge of the potato.
- In the bowl, mash the sweet potato, milk, salt and pepper.
- Distribute the mashed sweet potato mixture evenly back in each half of the potato. Using a spoon, create a well to crack the egg into.
- Gently crack the egg into the wells of each sweet potato. Bake in the oven for 20-30 minutes, depending on how you like your egg cooked.
- Crumble bacon and mix in with the mashed sweet potato mixture for extra flavor.
- Top with salsa, sriracha, green onions, avocado, or any other toppings you like!
- The potatoes love to stick to the foil when cooking. Be sure to spray that cooking sheet, or you'll have a hard time removing them from the foil when they're done.
