This recipe used to be titled “Paleo Ezekiel Bread Cinnamon French Toast”, but a few years later I realized bread in itself is not paleo. Oops! I wanted this recipe to reflect the true definition of ‘paleo’, so it’s since been renamed!

Some weekends I’ll splurge (hello, Leftover Stuffing Breakfast Casserole) and other weekends I’ll have a healthy version of whatever my husband is having. This Ezekiel Bread Cinnamon French Toast is one of those dishes!

If you’re familiar with healthy foods, it’s likely that you’ve heard of ezekiel bread. What’s the big deal? Here’s a crash course:
- Ezekiel bread is made with sprouted whole grains, which basically means that the natural process has been mimicked which breaks down enzyme inhibitors and allows for easier digestion and a more nutrient dense product.

- 2 slices Ezekiel bread
- 1 tsp cinnamon
- 1/4 cup egg whites
- 1 tbsp vanilla protein
- 1 tbsp unsweetened almond milk
Ingredients

- Prepare a skillet on the stove top over medium heat.
- In a small bowl, whisk together all ingredients and pour into a plate or shallow dish. Soak both sides of your slice of bread in the egg mixture.
- Cook over medium heat, about 2 minutes a side.
- Finish with your favorite clean toppings and enjoy!
