I’ve been holding onto this chocolate chip skillet cookie recipe for almost two whole years (insert monkey covering eyes emoji here).
It’s no secret that it’s a copycat recipe for those to-die-for skillet cookies at BJ’s. In college, I was OBSESSED. I think we went there almost every year for my birthday just so I could get a pizookie.
(That’s a combo of “pie” and “cookie” put together)
Which is essentially what this skillet cookie is. The top and sides are crunchy and allow you to cut out pieces like pie, but the middle stays gooey to give it that almost-cookie-dough-like consistency.
IT’S JUST SO GOOD, GUYS.
Top it with your favorite ice cream and you are set. I won’t lie- we recently made this and topped it with Bluebell Cookies & Cream ice cream. It was delicious. #noregrets
Chocolate Chip Skillet Cookie: What You’ll Need
- 8″ cast iron skillet
- Egg
- Salt
- Brown and white sugar
- Unsalted butter (if yours is salted just skip the salt)
- Vanilla extract
- Flour
- Baking soda
- Chocolate chips

- 1 egg
- 1/2 tsp salt
- 1/2 cup brown sugar
- 5 tbsp unsalted butter
- 1/4 cup white sugar
- 1 tsp vanilla
- 1 1/4 cup flour
- 1/2 tsp baking soda
- 1/4 cup chocolate chips
Ingredients

- Preheat oven to 375.
- If your cast iron skillet isn't totally non-stick, spray it with nonstick. Pour melted butter into skillet and combine with sugars.
- Add egg and vanilla, stir to combine.
- Mix in salt, flour and baking soda. Gently fold in chocolate chips and spread the cookie evenly in the skillet. Batter will be sticky!
- Bake at 375 for 17-20 min, or until golden brown. Allow to cool slightly and serve with ice cream!
