These Healthy Oatmeal Chocolate Chip Cookies are a spin on a traditional oatmeal cookie! Sweetened with coconut sugar, they’re a perfect thick and soft oatmeal cookie!

  1. Preheat oven to 350.
  2. Melt coconut oil and set aside to cool.
  3. In a medium bowl, mix together coconut sugar, salt, baking soda and oats.
  4. Create a well in the dry ingredients and add in eggs, cooled coconut oil, and vanilla.
  5. Once ingredients are well combined, stir in almond flour.
  6. Fold in chocolate chips. Scoop 1″ balls of dough onto a baking sheet*
  7. Bake for 8-10 minutes or until a toothpick inserted into the center of the cookie comes out clean.
Recipe Notes
  • If you’re using a cookie scoop, leave the dough in the ball shape. If you flatten them out, they cook faster and get a little crispy instead of soft and thick.
