There’s something about having muesli for breakfast that makes me feel like I have my life together. It sounds fancy, you know? I think people in Switzerland have it for breakfast.
Ah, yes, I am having my Swiss breakfast with coffee while I check my to-do list and listen to a podcast.
When we were in Boston last weekend, we stayed at a Vacasa rental (similar to Air B&B) and we picked up a few staples from Whole Foods so that we had breakfast food at the apartment. Eating breakfast at the hotel/apartment is one of my favorite hacks for saving money on a trip (also, splitting lunch or dinner if the portions are huge is a good one.)
On a whim I grabbed a to-go container of Bob’s Red Mill Muesli, and maybe it was the fact that I had just ran 6 miles, but it was the BEST muesli I’d ever had. Okay, not like I have it a lot but you get what I’m saying. I diced some fresh apples and added some vanilla almond milk and I think I told my husband four times how good it was.
I vowed I would figure out how to make it when I got home and here we are!
Easy Toasted Pecan Muesli: What You’ll Need
The best part about this easy toasted pecan muesli recipe is that it’s so versatile. You can add in any dried fruit, nuts and seeds that you have on hand. Here’s what you’ll need for the base:
- Old fashioned oats
- Brown rice puffed cereal*
At Kroger I could not find brown rice puffed cereal, and I considered going to another store to find it. However, part of the mission of A Simplified Life is to make life easier, so instead I just grabbed this cinnamon rice puff cereal and called it a day. You’ll love the extra crunch that comes from the cereal!
Add-ins:
- Nuts
- Dried fruit
- Seeds
- Coconut (optional)
How Do I Eat Muesli?
Hey hi that’s such a good question and I’m glad you asked.
There are a few different ways to eat muesli and I promise you won’t feel like you’re chewing on dried oats. (That was definitely why I avoided muesli for so long).
- In a bowl with cereal and fresh fruit
- As a topping for a yogurt bowl or smoothie
- Soaked in milk for 12 hours overnight oats style
Personally, I pour it in a cereal bowl, add unsweetened vanilla almond milk and let it sit for a few minutes while I chop up some fresh fruit. This way it’s not completely dry but also not soaked. Sometimes I’ll add in ground flaxseed or some chia seeds for extra fat and fiber (keeps you full longer!).
How To Make Toasted Muesli
This might be one of the easiest recipes I’ve ever done- it’s done in under 20 minutes and you have breakfasts for days!
Toast The Oats
Preheat an oven to 350 and spread the oats out on a parchment lined baking sheet. You can also choose to roast nuts if you’re adding them- it gives such a toasty flavor! Toast the oats for about 15 minutes, then stir and set them aside to cool. You’ll know when they’re almost ready because your kitchen will start to smell like heaven.
Add Your Extras
Once your oats have cooled, add in your nuts, seeds and fruit. I chose to add:
- A mix of toasted pecans and almonds
- Golden raisins + dried cranberries
- Sunflower seeds
- Pumpkin seeds
- A little bit of dried coconut
You can mix everything together in a bowl or just dump everything onto the baking sheet and stir with a spatula! Place it in an airtight container and eat within 7 days.

- 3 cups old fashioned oats
- 1 cup brown rice cereal or crunchy cereal of choice
- 1/2 cup dried fruit raisins, cranberries, apples all work great
- 3/4 cup nuts of choice
- 1/2 cup seeds sunflower seeds, pumpkin seeds or both

- Preheat oven to 350 degrees. Line a large baking sheet with parchment paper and spread out oats and nuts to be toasted.
- Toast for 15 minutes, remove and stir. Let cool for about 10 minutes.
- Once cooled, add cereal, dried fruit and seeds directly to the baking sheet and stir with spatula.
- Transfer to an airtight container for storage. It will stay good for about 7 days- after that the moisture starts to soften the oats.
- To make the toasted muesli as photographed, add 1/4 cup of golden raisins, 1/4 cup dried cranberries, a handful of unsweetened dried coconut flakes, 1/4 cup pumpkin seeds, 1/4 cup sunflower seeds, 1/2 cup of pecans and 1/4 cup of almonds.
