  1. Heat a skillet over medium heat or an electric griddle to just over 300 degrees. Slice your banana into coins about the thickness of your pancakes and set aside.
  2. In a mixing bowl, combine pancake mix, water and granola.
  3. Pour out your desired size of pancake mix and drop in the banana slices as desired.
  4. Cook until bubbles come up in the center of the pancake, then flip and cook for about 4 minutes on the opposite side.
Recipe Notes
  • Use any pancake mix or granola that you like!
  • The bananas get wonderfully caramelized with this method, but if you find it’s too messy, you can gently mix the banana slices into your finished batter and pour it out that way.
