These Banana Granola Multigrain Pancakes are such an easy and fun way to dress up a boxed mix! Perfect for a weekend morning!
Breakfast is my favorite part of the weekends, y’all.
There’s something about frying up some eggs and bacon and a whole mess of pancakes and sharing it with loved ones that makes me happy.
We moved into our new home Easter weekend and let me just tell y’all- it was a WHIRLWIND. The day before we were supposed to close, we found out the house had failed to get it’s Certificate of Occupancy (CO).
Twice.
No CO = no close.
Our builder told us he was going to try a third time for the CO the MORNING we were set to close.
An hour and a half before our appointment at the Title Company, the builder called me to tell me he got the CO. I literally fell to the ground and thanked him approximately 457 times.
(This is after we extended our apartment lease at the cost of naming rights to our first born, basically. If we didn’t close that day, we were going to have to spend hundreds of dollars to extend our lease another week. Not to mention all the family that was going to help us move, and my parents being in town specifically to help, etc.)
All in all, we got it done and were able to enjoy an Easter lunch with my family to top off the weekend. Whew.
While my parents were here, I took them to a killer breakfast at a place called First Watch, where I proceeded to have the BEST banana granola pancake of my life.
I knew I had to recreate it!
I’ll be honest with y’all- I’m not about that pancake-mix-from-scratch life. I hope you’ll forgive me, but this recipe uses boxed pancake mix!
Believe me, there are some things worth making from scratch in life.

Other things, I’m all about the shortcuts. Like these cream cheese swirl brownies. And these pancakes.
What You’ll Need
- Your favorite pancake mix
- Granola of choice
- Ripe bananas
- Water
We cooked these on an electric griddle that Andrew got me as an anniversary gift while we were dating (Weird? Cute? Still can’t decide). It’s by far the BEST tool for cooking mass amounts of pancakes. What I like best is the fact that all the pancakes come off at the same time and you’re not left cooking the last few flapjacks in the kitchen while the rest of the family starts eating so their food doesn’t get cold. Ya feel me?
For my pancakes I used Kodiak Cakes Superfoods Flapjack and Waffle Mix and Wildway Grain Free Banana Nut Granola.

- 2 cups multigrain pancake mix
- 2 cups water
- 1/2 cup granola
- 2 bananas
Ingredients

- Heat a skillet over medium heat or an electric griddle to just over 300 degrees. Slice your banana into coins about the thickness of your pancakes and set aside.
- In a mixing bowl, combine pancake mix, water and granola.
- Pour out your desired size of pancake mix and drop in the banana slices as desired.
- Cook until bubbles come up in the center of the pancake, then flip and cook for about 4 minutes on the opposite side.
- Use any pancake mix or granola that you like!
- The bananas get wonderfully caramelized with this method, but if you find it's too messy, you can gently mix the banana slices into your finished batter and pour it out that way.
