These Cilantro Lime Black Beans are the easiest way to doctor up a can of black beans for a quick taco night side dish!
I’m going to be real with y’all here for a second.
I’m all about a homemade pot of pinto beans with bacon and cilantro the way my tia makes them for family holidays. The beans soak overnight then simmer for hours…that’s my hispanic heritage in one cozy dish.
But at 6 p.m. on Taco Tuesday when it’s a build-your-own taco-bowl-and-fend-for-yourself-cause-I’ve-been-up-since-4:45 kind of day, I need a shortcut.
That shortcut is canned black beans.
There. I said it.
While my husband would be content with pouring said beans into a bowl, microwaving them, then transferring to his plate, I like to doctor them up a bit.
It’s so easy that I almost feel silly sharing this recipe with you. But ASL is all about easy recipes for busy people, SO HERE WE ARE. Cilantro Lime Black Beans. Let’s do this thang.
Cilantro Lime Black Beans: What You’ll Need
We have a very complicated set of ingredients here.
- can of black beans
- juice from one lime
- handful of cilantro
- salt*
..that’s it. Told you it was easy.
*Check out the label of your can of beans- some already have salt added to them. If so, skip the salt (or add it later if necessary).
We also have very complicated instructions. Are you ready?
In a small pot, combine black beans, lime juice and cilantro. Bring to a simmer and let it sit until you’re ready to serve. The end.
This is a judgement free zone- canned goods are most definitely allowed. Just be wary of extra preservatives and sodium levels, okay? THEY’LL GETCHA.

- 1 can black beans drained to desired level of soupy-ness
- 1 lime juiced
- 1/4 bunch cilantro chopped
- 1/2 tsp salt *if beans are not salted- read your label
Ingredients

- In a small pot over low-medium heat, combine all ingredients. Cover and allow to simmer for at least 15 minutes for flavors to combine. Serve when ready.
- Rinse beans to cut down on the amount of sodium. You may need to add in a little water to the pot to add liquid back in.
- Add diced garlic for a little extra flavor!
