These BBQ Chicken Stuffed Sweet Potatoes are a quick weeknight dinner and are Whole30 and Paleo-friendly!

Instructions
  1. In a bowl, mix chopped chicken with bbq sauce. Allow to sit while you prepare the toppings.
  2. Slice sweet potatoes down the middle and push the ends in to open up the potato.
  3. Chop red onions and prepare other desired toppings (parsley, cheddar cheese, sour cream- if not doing Whole30)
  4. Assemble sweet potatoes by dividing the bbq chicken among the sweet potatoes, then adding your desired toppings.
Recipe Notes
  • Feel free to swap for russet potatoes if sweet potatoes aren’t your thing!
