These BBQ Chicken Stuffed Sweet Potatoes are a quick and healthy weeknight dinner! Bonus: they’re Whole30 & Paleo friendly!
Happy day-after 4th of July! I hope your day was filled with family, friends, food, and lots of sun. Andrew played in a golf tournament most of the day so I went to a yoga in the park that my yoga studio hosted and tie dyed a tank! It was honestly so fun! We relaxed the rest of the day and enjoyed some time outside.
I’m sure your BBQ pits were all fired up yesterday, so today I’m sharing a spin on what you can do with leftover BBQ chicken- these stuffed sweet potatoes!
BBQ Chicken Stuffed Sweet Potatoes
There are two foods my husband got tired of during our Whole30.
- Avocados (I served them every single day during our first week. Oops.)
- Sweet potatoes.
I am 99% sure that I ate sweet potatoes 6 out of 7 days a week during my Whole30. I’d roast them for breakfast, mash them for post-workout carbs, or make baked sweet potato fries with chipotle mayo for dinner.
I’m surprised my skin didn’t turn orange, y’all.
If you’re relatively active, you’re encouraged to add more complex carbohydrates to your meals during Whole30. These include potatoes, beets, squash, and of course sweet potatoes.
You could say sweet potatoes fueled my Whole30.
I just realized I’ve written 100 words about how much I love sweet potatoes and there’s a very good chance y’all get the point. Favorite vegetable. The end. (insert monkey covering eyes emoji here)
How to Make BBQ Chicken Stuffed Sweet Potatoes
Here’s what you’ll need:
- Cooked sweet potatoes (you’ll find the easiest way to bake foolproof sweet potatoes below!)
- Cooked and chopped chicken (from a rotisserie is perfect)
- BBQ sauce (read your labels if you’re doing Whole30)
- Red onion
- Parsley
That’s it! If you pre-cook your sweet potatoes and make some shredded chicken in your pressure cooker at the beginning of the week, this dinner can come together in 10 minutes!
The Best Way to Make Sweet Potatoes
I have this method written on a post-it that’s been stuck to the side of my fridge for years. It’s the best way to get sweet potatoes that literally fall out of the skin.
- Scrub sweet potatoes well and pierce with a fork a few times.
- Place directly into a cold oven, straight on the rack with a sheet of foil beneath to catch drippings.
- Set your oven to 425 and cook 45 minutes for medium potatoes, 1 hour for large potatoes.
- When the sweet potatoes are done, turn off the oven and let them sit in the oven for 30 minutes.
Works perfectly every time!

- 4 sweet potatoes cooked
- 3 cups chicken cooked and chopped
- 1/4 cup chopped red onion
- 1/2 cup bbq sauce
Ingredients

- In a bowl, mix chopped chicken with bbq sauce. Allow to sit while you prepare the toppings.
- Slice sweet potatoes down the middle and push the ends in to open up the potato.
- Chop red onions and prepare other desired toppings (parsley, cheddar cheese, sour cream- if not doing Whole30)
- Assemble sweet potatoes by dividing the bbq chicken among the sweet potatoes, then adding your desired toppings.
- Feel free to swap for russet potatoes if sweet potatoes aren't your thing!
