I’ve been making this Balsamic Cucumber, Tomato and Chickpea Salad for over a year and finally got around to shooting it for the blog! I hope you enjoy! First, a (long) story about how this wound up on the blog today.
Food Freedom Journey Update
Since finishing my Whole30 and embarking on my Food Freedom journey, it’s been so much fun re-introducing foods that I previously told myself were “bad” or “off limits”.
The idea is that I try these foods, evaluate whether or not it’s worth it/something I want to bring back into my regular diet, and move forward, rather than keeping the food 100% off limits and depriving myself.
I had Oreos for the first time in YEARS, y’all.
(Decision: not actually as great as I remember them being…so much sugar.)
The first few weeks I entered this “no food rules” perspective, I had dessert every day for 14 +days. I was on the biggest peanut butter and chocolate kick, which is when these 4-Ingredient Salted Dark Chocolate Peanut Butter Cups were invented.
Eventually, my brain realized that there were no more food rules, and no I didn’t need to eat every box of Oreos in sight, and it was ok to return to normal eating. The Oreos would be there if I ever wanted them.
It was during this time of food exploration when my husband and I went to the grocery store to pick out something to make for date night. We walked in and my husband said, “Ok, we’re adults. We can pick anything in this entire store for dinner.”
…this was like a whole new world to me.
I could pick anything?!
I could get a pint of ice cream and call it dinner?! A loaf of that garlic bread that comes in the foil envelope?! (Y’all know which one I’m talking about..I had been craving it so hard.)
I wandered around the store wondering what I would select with my newfound freedom.
And you know what I finally picked?
Cucumbers.
And tomatoes.
So that I could make this salad.
With quite literally all the choices in the world, my brain decided on the freshness and flavorfulness that is this Balsamic Cucumber, Tomato and Chickpea Salad. It’s one of my favorite side dishes to make in the summer and pair with grilled chicken. It’s equally as delicious if you throw in some avocado!
Balsamic Cucumber, Tomato and Chickpea Salad: What You’ll Need
- Cucumber
- Cherry tomatoes
- Red onion
- Chickpeas (any white bean will work!)
- Balsamic vinegar
- Olive oil
- Salt & pepper
How To Make It
This one’s pretty easy, folks. Chop up all the goods. Mix together in bowl. Eat! For a deeper flavor, let it sit in the fridge for an hour or two before serving.
It’s the perfect side dish for grilled chicken or these reader-favorite sundried tomato and feta turkey burgers!

- 1 large cucumber
- 1 cup cherry tomatoes halved
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/4 cup red onion chopped
- 1 cup chickpeas rinsed
- 1/4 tsp salt
- 1/4 tsp pepper
Ingredients

- Chop cucumber, tomatoes, and red onion. Combine in a large bowl with chickpeas.
- Drizzle olive oil and balsamic vinegar and mix. Salt and pepper to taste. Serve immediately or store in the fridge!
