This multipurpose 10 Minute Pressure Cooker Taco Chicken is perfect for meal prep, slicing up for tacos, quesadillas, burrito bowls, and more!
Last week I took a short mid-week trip down to Austin to see family and had so much fun. If I’m going on a solo trip, I always try to prep a few things for my husband to eat while I’m gone so he doesn’t resort to fast food dinners. This last time I roasted a tray of sweet potatoes, red potatoes, broccoli and asparagus, made some brown rice, and made this super easy pressure cooker taco chicken!
I love making chicken in the pressure cooker for meal prep because it gives me a really easy protein option to have on hand. I can use it on a salad or in a grain and veggie bowl, or my husband can use it in quesadillas, on nachos, or as is.
We make a few different kinds of chicken, but this pressure cooker taco chicken is by far our go-to!
What You’ll Need
You know I’m all about simplicity here. Here’s all you’ll need:
- Pressure cooker (I have a Fagor Multicooker that I LOVE. You can read all about it in this post.)
- Chicken breasts
- Meat tenderizer to pound out chicken to even thickness (hint: use the flat side for chicken and the opposite side for things like red meat)
- Taco seasoning (this is my go-to seasoning recipe)
How To Make Pressure Cooker Taco Chicken
Alright, let’s do it.
First, pound out your chicken to even thickness.
Although pounding out the chicken to even thickness is kind of messy, it’s really important. I tried to skip this step once, the chicken didn’t cook evenly, then I had to close up the pressure cooker, allow it to build up pressure again…it was a mess. Don’t do that.
Season your chicken and place it down in the pressure cooker. It’s okay if some of the pieces overlap!
Liquid is what makes pressure cookers build up steam and cook, so without adequate liquid, your food won’t cook. I also learned this the hard way. Again, don’t do this. Add about 1/2 cup of water or chicken broth (I try to pour it off to the side so it doesn’t disturb the seasoning on the meat too much.)
Set your pressure cooker to “high” for ten minutes and make sure the pressure release valve is sealed.
When time is up, release the pressure (watch the steam!) and remove your chicken. Let it rest for a few minutes and then slice up if desired!

- 2 Tbsp taco seasoning
- 1/2 cup water
Ingredients

- Using the flat side of a meat tenderizer, pound out chicken breasts so they're an even thickness. Season both sides with taco seasoning and place down into pressure cooker.
- Pour in 1/2 cup of water off to the side of the chicken so that it doesn't rinse off all of the seasoning.
- Close up your pressure cooker and make sure the valve on top is closed. Set it to pressure cook on high for 10 minutes.
- Once time is up, carefully release steam from pressure cooker by opening the valve away from you. Once pressure is released, remove chicken, slice up and serve!
- This cooking method can be used with any kind of seasoning! Try lemon pepper or Italian seasoning for something different.
