This one dish Hummus Crusted Chicken is the perfect go-to for a hassle free end-of-week dinner! Savory hummus and a blend of spices come together for an easy chicken dinner with minimal prep time.
It’s no secret that 99% of the recipes I make:
- are made in 30 minutes or less
- have elements that are prepped ahead of time in order to make life easier
- have short ingredient lists
- require minimal dirty dishes

I firmly believe that healthy meals should be quick and easy so I can relax on the couch with my husband, our lab and a glass of wine. That’s what I want my evenings to look like.
Can I get an amen?
Someday evenings will be filled with soccer practices and science projects and oh-by-the-way-there’s-a-party-at-school-tomorrow-and-I’m-taking-cupcakes moments. But for now, I choose to soak up these precious, slow summer evenings.
Hummus Crusted Chicken
Hummus and chicken breasts are two things we always have on hand, which makes this the perfect “we have nothing to cook” meal. There are two amazing fantastic key parts of this dish. Are you ready?
- You can use ANY kind of hummus. I’m a plain hummus kind of gal, but roasted red pepper, mediterranean, anything works.
- You can use ANY veggies you have in the fridge to round out this meal. It can even be a clean out the fridge kind of dish. Just throw ’em in.
Assembling The Dish
Starting with the chicken breasts, pound them out evenly with a meat tenderizer and space them out in a 9×13 dish. Set aside 2 tbsp of hummus for each chicken breast, and spread evenly over each one.
Top the hummus with the seasoning blend (if you do the seasoning first, it will move around all wonky when you’re spreading the hummus). For a crunchy finish, sprinkle panko or bread crumbs on each one. To keep it paleo, I omit the panko, but my husband loves the crunchy topping.
Arrange your chopped vegetables around the chicken, drizzle with olive oil and seasoning, and it’s ready! Our favorites are carrots, onion, zucchini and tomato.

Cooking Notes
The key to getting the crispy top to the chicken is switching the oven on broil for the last 2 minutes or so. Be sure to keep an eye on it as it goes from brown to burnt in a hot second (literal hot second).

- 4 chicken breasts
- 1/2 cup hummus 2 tbsp per chicken breast
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne
- assorted vegetables
- 2 tbsp panko breadcrumbs optional
Ingredients

- Preheat oven to 425.
- Pound out chicken breast if needed to get them to even thickness. Spread 2 tbsp of your favorite hummus on chicken.
- Sprinkle seasoning blend on top and panko (if desired).
- Chop up veggies, drizzle with olive oil and seasoning of choice.
- Bake for 25-30 minutes, with the last two minutes on broil.
